That’s what I want to do when I retire (though I don’t think I’ll ever actually retire.) I make some other stuff that people love too — pickles, bloody mary mix. I just do it for fun when I need to get away from business and unwind. I’ve given away a LOT of pickles. People save their jars and bring them back to me asking for more.

I was clueless until a few years ago when I happened upon a recipe in Garden & Gun magazine. I started making it and bringing it to the annual Derby party I go to. My friend Greg (the displaced Southerner) says it’s the best he’s had. But he might just being polite. It may also be the only pimento cheese he’s had in some years. There is power in nostalgia.

Plenty of Mint Juleps! Maybe too many for some, but hey, it’s Derby Day.

The best moment of all came when I offered up a spare jar of homemade pimento cheese to a good friend, a Southerner displaced here in Connecticut. He somehow convinced me that if he returned the jar, I’d refill it… And so it goes, open promises.
